If you are a Coconut lover then you will definitely love this recipe. It is a very simple and easy to make Christmas delicacy. It is quite light and is definitely something that will add colour to your Christmas sweets platter. You can either use one colour or can add another colour to it.
Best to store it in an air tight jar and leave it in a cool place or in the refrigerator.

Ingredients
  

  • 400 gms Condensed Milk Usually 1 tin is 400 gms
  • 2 cups Icing Sugar If you don't like it too sweet you may use 1½ cup Sugar
  • 4 cups Desiccated Coconut
  • Pink Food Colour Few drops
  • Rose Flavour/Strawberry Essence Few drops (Optional)

Instructions
 

  • Take a deep dish and add the Condensed Milk and the Icing Sugar
  • Mix well until combined
  • Now add the Desiccated Coconut and mix well using a spatula
  • The mixture will be sticky
  • Now transfer half of the mixture into a separate dish
  • Add the food colour and essence into 1 half of the mixture
  • Mix well until well combined and the colour changes to the desired pink
  • Let the other half remain white or you may add a food colour/essence as per your choice
  • Now take a baking tray or any dish and place the parchment paper over it
  • Grease it slightly with butter
  • Now add the white mixture into the dish with the parchment paper
  • Use a spatula to smoothen the surface
  • Now add the pink mixture over the white mixture
  • Smoothen again with the help of a spatula
  • Cover the dish with a cling wrap or foil and let it refrigerate for 3-4 hours
  • Remove the block from the parchment paper and cut in cubes
  • The Coconut Ice is ready and can be stored in an air tight jar in a cool place/refrigerate
