Since Pancake Tuesday is around the corner, so thought of sharing with you all the recipe for the Goan Pancakes. It is a simple and easy to make dish that can be served as a teatime snack or as a dessert to any meal.
The pancakes are made in a light batter and have a sweet coconut filling. You may use either sugar or jaggery as per your liking.

Ingredients
  

Ingredients for the Pancake batter

  • 1 cup Flour All purpose
  • 1/2 cup Milk
  • 1/2 cup Water
  • 1 Egg
  • pinch Salt
  • Food colour Optional

Ingredients for the filling

  • 3/4 cup Desiccated Coconut/Freshly grated Coconut
  • 1/4 cup Sugar You may use Jaggery as an alternative
  • 2 tbsp Lemon juice
  • 1/4 tsp Cardamom Powder

Instructions for the filling

  • Take a pan and roast all the ingredients on medium flame until it comes together
  • Roast the Coconut until the colour changes slightly
  • Remove the stuffing to a plate and let it cool

Instructions for Pancake Batter

  • Mix all the ingredients of the batter together and whisk well until a smooth thin batter is formed
  • Lightly grease a pan
  • Use a ladle to pour the batter and swirl the pan so that the batter spreads thinly evenly
  • When the bubbles appear on the pancake, flip it over and cook for about a minute
  • Remove the pancake to a plate
  • Place about 1-2 tablespoons of stuffing and wrap it from the sides and roll it to make parcels
  • Repeat it with the remaining batter and stuffing
  • This recipe will make between 8-10 pancakes
