There is a huge difference in taste in the Chow Mein served at the Restaurant and the one served by the roadside. Desi Chow Mein is very popular in India and is also known as Hakka Chow Mein/Noodles. What I love about Desi Chow Mein is that it is quite saucy and flavourful. One doesn't need to add any extra sauce to it while eating.
For a fact Chow Mein is a popular favourite both amongst adults and kids. I myself cook Chow Mein atleast once in 2 weeks. It is a quick, easy and light dish. When you make it the Desi way it will be all the more irresistible. In Karachi we used to love having the Desi Chow Mein from the Street Vendor in Garden East, it was so delicious and my son remembers the taste till today. I have tried to bring in the same flavours of the Street Style Chow Mein and I am sure you will like this variation of the Noodles, if you and your family are Noodle lovers!

Ingredients
  

Chicken Marination Ingredients

  • 250 gms Chicken (Boneless) Sliced
  • 1 tsp Ginger and Garlic Paste
  • 1.5 tbsp Soya Sauce
  • 1 tsp Vinegar
  • 1/2 tsp Black Pepper Powder
  • Salt According to taste

Ingredients for Chowmein

  • 1 Packet Noodles (Boiled and strained) Any Brand, preferably egg Noodles
  • 4 tbsp Oil 2 tbsp to be used when stir frying the vegetables and the remaining 2 tbsp oil to be used when stir frying the Chicken
  • 1 tbsp Garlic Finely Chopped
  • 1 tsp Ginger Finely Chopped
  • 1 Onion (Medium) Sliced
  • 2 cups Cabbage Finely Sliced
  • 1 cup Carrot Julienne cut
  • 1 cup Capsicum Julienne cut
  • 1 cup Spring Onion Julienne cut

Ingredients for Sauce

  • 2 tbsp Soya Sauce
  • 1 tbsp Vinegar
  • 2 tbsp Tomato Sauce/Ketchup
  • 1 tsp Chilli Sauce May increase to 1 tbsp if you want it spicy
  • 1/2 tsp Black Pepper Powder
  • 1 Chicken Stock cube
  • Salt According to taste

Instructions for Marinating the Chicken

  • Add all the marination ingredients to the Chicken including except the oil and mix well
  • Now keep the Chicken aside and let it rest in the marinade for about 20 minutes

Instructions for preparing the sauce

  • In a bowl add all the sauce ingredients. You can crumble the Chicken Stock Cube and add it to the Sauce mixture
  • Keep this aside

Instructions for preparing the Chowmein (Best to prepare in a non-stick wok/pan)

  • Add Oil in a Wok (you may use a Karhai)
  • Add the Onions and stir fry for about a minute
  • Now add all the vegetable except the Spring onions and stir fry on high heat for about 1-2 minutes
  • Add the Spring onions in the last 30 seconds, stir well
  • Now remove the stir-fried vegetables and keep it aside
  • Now pour the remaining 2 tbsp oil in the Wok/Pan/Karhai and heat it
  • Add the chopped Garlic and Ginger and sauté for about a minute until fragrant, don't brown it
  • Add the marinated Chicken and stir fry until the Chicken is cooked completely
  • Add the Sauce mixture to the Chicken and and stir well
  • Let the Chicken simmer in the sauce for about 2-3 minutes, don't dry up the sauce
  • Now turn your flame high and add the noodles to the Chicken
  • Give the noodles a good mix until it is well coated with the sauce
  • Now add the Stir fried vegetables and stir fry the noodles on high flame
  • Toss the noodles so that the stir fried vegetables and the Chicken are evenly mixed
  • Your Desi Chow Mein is now ready, serve hot
