Momo is a type of a steamed filled dumping popular across the Indian Sub Continent. They are extremely popular among the natives of the Indian subcontinent, and can be found in every kind of shop from restaurants to street vendors.
I actually learnt to cook this dish from the Nepali boys working at the Shop. I was very intrigued by the simplicity of the dish and how it's beautifully wrapped into a soft dumpling. I decided to do a Tandoori version of this dish to give it a spicy kick. The Tandoori flavour actually uplifts the Momos and makes it all the more flavoursome and Desi.
You can either steam the Momos and enjoy them by itself or add the Tandoori Masala and give it a spicy and unique flavour which is very irresistible. You can serve them with a Peanut Satay Sauce/Chilli Garlic Sauce or any other Sauce of your choice. Best to serve them fresh!

Ingredients
  

Ingredients for Momo filling

  • 500 gms Chicken Mince
  • 1/2 cup Onions Finely Chopped and squeeze out the water
  • 1 tbsp Ginger Finely Chopped
  • 1 tbsp Garlic Finely Chopped
  • 1/4 cup Cabbage Finely Chopped and squeeze out the water
  • 3 tbsp Corriander Finely Chopped
  • 3 tbsp Spring Onions Finely Chopped
  • 1 tsp Cumin Powder
  • 1/2 tsp Black Pepper Powder
  • Salt According to taste

Ingredients for the Momo Wrapper

  • 2 cups Flour/Maida
  • Water As required for kneading
  • Salt According to taste
  • 1 tsp Oil

Ingredients for Tandoori Masala

  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • 1 tsp Tumeric Powder
  • 1 tsp Garam Masala Powder
  • 1 tsp Chaat Masala
  • 1/2 tsp Black Pepper Powder
  • 1 tsp Kashmiri Red Chili Powder
  • 1/2 tsp Red Chilli Powder
  • 3 tbsp Yogurt
  • 2 tbsp Lemon juice
  • Salt According to taste
  • 1/4 tsp Tandoori Colour
  • 2 tbsp Oil
  • 3 tbsp Oil for Pan frying

Instructions
 

Preparation of Momo filling

  • Combine all the ingredients with the Chicken mince and refrigerate it for 20-30 minutes

Preparation of the Momo Wrapper

  • Add Oil and Salt to the Flour
  • Now add water in parts and knead the flour into a smooth dough
  • Cover the dough and let it rest for 15 minutes

Kneading and Folding the Momos

  • Make small balls of equal sizes out of the dough
  • Roll each ball to form a flat Roti. The Roti needs to be thin and stretchy,
  • Cut the Roti into a Round shape with the help of a cutter or a glass

Steaming the Momos

  • Once you have folded the Momo as per your descire shape now steam the Momo in the steamer for about 20 minutes
  • Once your Momos turn translucent, they are ready
  • You can eat the Momos steamed with your favourite sauce

Prepapration of Tandoori Momos

  • Combine all the ingredients of the Tandoori Masala and form a smooth paste
  • Now coat the steamed Momos in the Tandoori Masala. Please ensure that the Momos are slightly cooled down before coating them.
  • Now pour some Oil in a pan and lightly fry the Momos on each side until they get a grill look
  • Now plate the Momos and serve them fresh with some Sauce of your choice
