Bun Kabab is a very popular Street food in the Indo-Pak region, infact some people may consider it as the King of Street Foods in Pakistan. It is a very simple yet flavourful sandwich which can be eaten both as a main-course or a snack. I would call Bun Kabab, a Desi Sandwich which usually includes a patty of lentils or meat or mashed potatoes. The key ingredient here is the sauce or the chutney which combines the bun and the pattie together to give you a burst of flavours in your mouth. you also get some of the sauce/chutney in a plate so that you can dip the Bun Kabab and enjoy it even more. The sauce/chutney is a bit spicy which gives an extra kick to this snack. This traditional Street Food is available at nearly every main street corner. You will find a guy in his mobile food cart selling these delicious sandwiches all day long and people just standing near his cart and eating it fresh,
Usually people try to make this snack at home but always complain that it doesn't have the same flavour that you would get from the food cart. Undoubtedly you can't match that flavour, and I have put together a simple recipe which will try to take you back to the Desi Bun Kabab experience.

Ingredients
  

  • 6 Burger Buns
  • 3 Potatoes Peeled, Boiled and Mashed
  • 1.5 cups Split Chickpea (Channa Daal) Wash and Soak for 15 minutes
  • 1.5 tbsp Garam Masala powder
  • 1.5 tbsp Crushed Chilli
  • 1 tbsp Salt Can adjust according to taste
  • 2 tbsp Corrinader chopped
  • 1 tbsp Green Chillies chopped
  • Oil for frying As required
  • 2 Eggs well beaten
  • Sliced Onions, Cucumbers and Tomatoes For filling

Sauce/Chutney

  • 1/2 Cup Yogurt
  • 1/4 Bunch Corriander
  • 1/2 Bunch Mint Leaves
  • 1 Tbsp Tamarind pulp
  • 1 Green Chilli
  • 1 Garlic clove
  • Salt to taste

Instructions
 

  • Boil the Split Chickpea (Channa Daal) with the Garam Masala powder, Crushed Chilli and salt until it is completely dried out and. You can boil it in 1.5 cups of water
  • Once the water has dried up and the Split Chickpea (Channna Daal) is soft, take it out in a spearate dish and add the mashed potatoes, corriander, green chillies and mix it all together.
  • Check the salt and spice and adjust accordingly if you need to increase it
  • Now grind the mix in a grinder to combine all the ingredients
  • Make small patties out of the mixture and keep aside for frying
  • Now dip the patty into the beaten egg and shallow fry it in oil until both sides are golden brown and take them out in a plate
  • Cut the Buns in half (if not already cut)
  • Lightly grill the buns on a pan with some oil on both sides of each half
  • Now put some chutney at the bottom of the bun and spread it evenly
  • Add the fried patty
  • Put some onions, tomatoes and Cucumbers (as per your choice)
  • Put some chutney on the other half of the bun and spread
  • Cover the Bun Kabab and grill on the pan again for 30 seconds on each side
  • Take it off the pan and serve with Sauce/Chutney and Tomato sauce

Sauce/Chutney

  • Add 1/4 cup of water and grind all the ingredients
