Tandoori Chicken is a very popular dish in the Sub-continent. Tandoor means oven and this chicken is oven baked with spices and yogurt and is quite flavourful. The main attraction of this dish is the vibrant colour of the chicken using Kashmiri red chilli and some food colouring. This dish can also be grilled and on the barbeque which gives it a more enhanced flavour.
Tandoori Chicken is served with Nan bread, salad and yogurt. You may also serve it with aromatice saffron rice. This is quite a simple recipe dish and can be cooked quickly but the most important part of the dish is the marination. The longer it is marinated the more flavourful it is.
My Mum used to make this dish very often when we were young and it was our family favourite. Especially for parties and get togethers, this is one dish which will definitely be a crowd pleaser.

Ingredients
  

  • 4 Maryland Chicken Cuts without skin
  • 1/2 cup Yogurt
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 1 tbsp Red Chilli Powder
  • 1 tbsp Kashmiri Chilli Powder
  • 1 tsp Chaat Masala Can be easily bought from an Indian or Pakistani grocery store
  • 1 Lemon Squeeze out the Lemon juice
  • 1 tbsp Roasted Cumin Powder
  • Salt As per taste
  • 1/4 cup Oil
  • 1 tsp Tandoori Food Colour or Orange Food Colour

Instructions
 

  • Make slits on the Chicken for the marination spices to blend well (not very deep slits)
  • Rub the Chicken with Ginger and Garlic paste thoroughly
  • Now in a separate bowl mix the yogurt with the spices, food colour and salt and pour it over the Chicken
  • Add the lemon juice and Oil to the Chicken as well
  • Now mix the Chicken well and marinate for 2-3 hours (If it's marinated over night, the taste is much better)
  • After the marination is done, bake the Chicken in the oven for 30-40 minutes on 180 degrees C (Please flip sides half way through the baking)
  • If you want Charred marks on the Chicken put some Oil on the Grill Pan and grill the Chicken on both sides for 1-2 minutes
  • Serve with Nan bread, yogurt/chutney and salad

Tip for Smoky Flavour

  • If you want your Chicken to have a smoky flavour. Place the Chicken in a dish which has a well fitted lid. Heat a small piece of coal on the stove until it's red. Now place a piece of foil in the middle of the dish where the Chicken is placed. Pul the coal on the foil and pour 1tbsp of oil on the coal so that the smoke is released and cover the dish with the lid immediately. Open the dish after 10 minutes and discard the coal and the foil. Your Chicken will now have a smoky flavour!
