Falooda is a very popular Cold Beverage or Dessert in the Sub-Continent. It is a flavoured milk based dessert and is served with ice-cream, basil seeds, dry-fruits and fresh fruits etc. All in all it is a rich beverage/dessert and is best served chilled. It's origin is from Persia faloodeh, variants of which are found across West, Central, and South Asia.
In Karachi the Falooda is usually sold at local ice-cream outlets and it can vary from a simple Falooda to a Special one with every seasonal fruit and a combination of dry-fruits toppings. The most important element of the dish for me is the Falooda Noodles/Sev, which are long jelly like strands and gives a great texture to the Falooda. I have prepared the Falooda Noodles/Sev at home, you may use Vermicilli as well.
My sister makes really good home-made Falooda and I have taken some tips from her for creating this recipe, which is loved by all at my home.

Equipment

  • Squeezy Bottle

Ingredients
  

  • 1 ltr Milk
  • 4 tbsp Rooh Afza/Rose Syrup
  • 3-4 tbsp Sugar
  • 2-3 tbsp Basil Seeds/Tuk Malanga Soaked in a glass of water for an hour
  • Ice-Cream As required (Can use any flavour preferrably Vanilla or any Fruit flavour)
  • Chopped Dry fruits As required for garnishing
  • Seasonal Fruits As required for garnishing
  • Jelly Cubes As required for garnishing

Falooda Noodles/Sev

  • 1.5 cups Water
  • 1/2 cup Cornflour
  • 1.5 tbsp Sugar

Instructions
 

  • Mix the Milk with the Rooh Afza/Rose Syrup and sugar
  • Now bring the Milk Mixture to a boil and let it cool
  • Now add about 1-2 Tbsp of the Basil Seeds/Tukh Malanga and some of the Falooda Noodles in the Milk Mixture and leave it in the fridge to cool
  • Now Layer the Falooda with remaining of the Falooda Noodles, Basil Seeds (Tukh Malanga), Ice cream, Jelly Cubes, Milk Mixture, Dry Fruits and Seasonal Fruits and served Chilled. (Please watch the video for layering technique)

Falooda Noodles/Sev

  • Mix all the ingredients well until dissolved
  • Heat the mixture on medium flame and stir continuously until the mixture is thick, sticky and transluscent (It should have a glue like consistency)
  • Put the mixture into the squeezy bottle while it's hot and squeeze it into a deep dish with with ice cold water and ice. Make long noodle like shape and let it sit in the ice cold water and use accordingly for your Falooda as per instructions in the recipe above.
