Take a deep dish and add the Condensed Milk and the Icing Sugar
Mix well until combined
Now add the Desiccated Coconut and mix well using a spatula
The mixture will be sticky
Now transfer half of the mixture into a separate dish
Add the food colour and essence into 1 half of the mixture
Mix well until well combined and the colour changes to the desired pink
Let the other half remain white or you may add a food colour/essence as per your choice
Now take a baking tray or any dish and place the parchment paper over it
Grease it slightly with butter
Now add the white mixture into the dish with the parchment paper
Use a spatula to smoothen the surface
Now add the pink mixture over the white mixture
Smoothen again with the help of a spatula
Cover the dish with a cling wrap or foil and let it refrigerate for 3-4 hours
Remove the block from the parchment paper and cut in cubes
The Coconut Ice is ready and can be stored in an air tight jar in a cool place/refrigerate
