Mixed Sabzi (Sizzling style)
Mixed Veg or mixed Sabzi is a popular Desi Veg dish. You can use any vegetable of choice for this dish but I like to use a combination of Cauliflower, Carrots, Potatoes, Peas and Capsicum. Capsicum really gives a great flavour to the dish and peas add a bit of sweetness to the dish.I choose to prepare this dish in a dry sizzling way which just uplifts the flavours. Those who are not fond of veggies will love this dish. So do try out your Mixec Sabzi in a sizzling style and dazzle your family.

Ingredients
Vegetables
- 1 Potato (Large) Cut in cubes
- 1 Carrot Cut in cubes
- 1 cup Cauliflower Florets
- 1/2 cup Capsicum Cut in cubes
- 1/2 cup Peas
- 1 cup Onions Sliced
- 1 cup Tomatoes Chopped
Ingredients for the Masala
- 1 tbsp Garlic Chopped
- 1 tbsp Green Chillies Chopped
- 4-5 Red Button Chillies
- 1 tsp Red Chilli Flakes
- 1 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 1 tsp Dried Fenugreek Leaves Dried Kasuri Methi
- Salt According to taste
Instructions
- Heat Oil in a pan and fry the potatoes until golden brown
- Now add the Cauliflower florets and fry for another 1-2 minutes
- Add the Carrots and fry for another 1 minute
- Add the Carrots and fry for another 1 minute. Now cover the pan and let the vegetables cook for 1-2 minutes on medium flame and then switch the stove off
- Now take a pan (preferably frying pan or you may use a flat pan). This will give a sizzling effect
- Add Oil and fry the Garlic until aromatic
- Now add the chopped Green chillies and fry for another minute
- Now add the Onions and fry until golden brown
- Add the tomatoes and fry on high flame until well blended (The gravy needs to be thick)
- Now add all the spices, salt and the red button chillies besides the Fenugreek leaves and mix well
- Add the vegetables (Potatoes, Cauliflower, Carrots) that were sauteed before to the mixture and mix well so that the vegetables are well coated in the spices
- Now add the Capsicums and Peas and mix for another 1-2 minutes
- Now add about 1/2 cup of water and cover the dish until its dry and the vegetables are cooked
- Once the dish is dry and starts sizzling, add the Fenugreek leaves and mix well
- Garnish with Green Chillies and serve with Chapatis/Bread
