Goan Pancakes (Pancake Tuesday Special)
Since Pancake Tuesday is around the corner, so thought of sharing with you all the recipe for the Goan Pancakes. It is a simple and easy to make dish that can be served as a teatime snack or as a dessert to any meal.The pancakes are made in a light batter and have a sweet coconut filling. You may use either sugar or jaggery as per your liking.
Ingredients
Ingredients for the Pancake batter
- 1 cup Flour All purpose
- 1/2 cup Milk
- 1/2 cup Water
- 1 Egg
- pinch Salt
- Food colour Optional
Ingredients for the filling
- 3/4 cup Desiccated Coconut/Freshly grated Coconut
- 1/4 cup Sugar You may use Jaggery as an alternative
- 2 tbsp Lemon juice
- 1/4 tsp Cardamom Powder
Instructions
Instructions for the filling
- Take a pan and roast all the ingredients on medium flame until it comes together
- Roast the Coconut until the colour changes slightly
- Remove the stuffing to a plate and let it cool
Instructions for Pancake Batter
- Mix all the ingredients of the batter together and whisk well until a smooth thin batter is formed
- Lightly grease a pan
- Use a ladle to pour the batter and swirl the pan so that the batter spreads thinly evenly
- When the bubbles appear on the pancake, flip it over and cook for about a minute
- Remove the pancake to a plate
- Place about 1-2 tablespoons of stuffing and wrap it from the sides and roll it to make parcels
- Repeat it with the remaining batter and stuffing
- This recipe will make between 8-10 pancakes
