Cauliflower Fried Rice
Cauliflower Rice is an excellent for Rice if you are looking to cut carbs. Although Cauliflower may have a bland taste but if cooked with other vegetables and spices, it helps to level up the flavours.You can get frozen Cauliflower Rice or you may opt to grate it freshly. I love to use the fresh Cauliflower as it maintains it doesn't become soggy when cooking. You may use your favourite veggies for this Fried Rice. I have used Keto friendly Veggies in this recipe
Ingredients
- 1/2 Medium Cauliflower Head 450-500gms
- 1 tbsp Garlic Finely Chopped
- 1-2 Egg Well Beaten
- 1 tsp Black Pepper Powder
- 1/4 cup Cabbage Finely sliced
- 1/4 cup Capsicum Finely Sliced
- 1/4 cup Spring Onions Finely Chopped
- 2 tbsp Soya Sauce
- Salt Acoording to taste
Instructions
- Grate the Cauliflower finely, you may also use the food processor to pulse it
- Pour some oil in a pan, add the beaten egg and scramble fry it
- Keep the scrambled eggs aside
- In the same pan pour some more oil about 1-2 tbsp and sauté the chopped garlic until fragrant
- Now add the cabbage, Capsicum or other veggies as per your choice and stir fry for about 1-2 minutes
- Add the grated Cauliflower, Soya Sauce, Pepper and Salt and stir for another 1-2 minutes
- Stir until the Cauliflower is cooked and dry
- Now add the scrambled eggs and the Spring Onions and stir well for another minute
- Your Cauliflower Rice is now ready to be served hot, garnish with some Spring Onions
