There are different variations of Tawa Botis but one thing is common amongst it and that is the fact that it is cooked on a Taw/Skillet. Did you know that if your food is cooked on a Tawa it would have a different flavour to it than if cooked in a normal dish.
One of the main highlights of the Tawa Boti is the Smoky flavour which is very similar to the Botis cooked on Skewers on the BBQ pit. In order to get the perfect moist and succulent Botis, it needs to be marinated overnight. If you are time poor then 2-3 hours or longer would also work.
The Recipe is quite simple and only requires basic Desi Masalas. So give it a try, if you want to enjoy Restaurant style BBQ at home using your basic Tawa!

Equipment

  • Tawa/Skillet/Frying Pan

Ingredients
  

  • 1/2 kg Beef Boneless (Cut in Cubes) May use Goat/Lamb
  • 1.5 tbsp Ginger & Garlic Paste
  • 1.5 tbsp Raw Papaya Paste Alternatively you may use 1tsp Meat Tenderizer
  • 1 tbsp Chopped Green Chillies
  • 1/2 cup Fried Brown Onions
  • 1/2 cup Yogurt Well beaten
  • 1 tbsp Red Chilli Flakes
  • 1/2 tsp Black Pepper Powder
  • 1 tsp Roasted Cumin Powder
  • 1 tsp Corrinader Powder
  • 1 tsp Chaat Masala
  • 2 tbsp Lemon Juice
  • 1/4 cup Oil
  • Salt According to taste

Coal Dum-for Smoky Flavour

  • 1 piece Coal Heat until it is red
  • 1 tsp Oil

Instructions
 

  • Rub the Boneless Meat cubes with Ginger & Garlic Paste, Raw Papaya paste/Meat Tenderizer and Chopped Green Chillies and let it rest for 15-20 minutes
  • Now add all the spices, yogurt, fried brown onions, oil, salt and lemon juice to the Meat cubes and mix well
  • Let the Meat marinate for 2-3 hours, for better results marinate it over night
  • Now pour 1 tbsp of Oil on your Tawa/Skillet or Frying pan and heat it
  • Add your marinated Beef mixture and give it a good stir until it's colour changes
  • Now cover the beef, add about 1/2 cup of water and let it cook on low flame for about 30 minutes
  • Now remove the lid and check if the Beef is tender. The longer you marinate the Beef, the faster it will cook
  • If the Beef is still not tender, add another 1/2 cup of water and cover the Beef and let it cook on low flame until tender
  • Once the Beef is tender, remove the lid and fry the Beef on high flame until the Oil separates
  • In the meanwhile heat up your coal until red hot and get ready to give Dum to your Botis

  • After you have given Dum to your Botis, cover and let it simmer on the stove on low flame for 2-3 minites
  • Remove the Botis from the stove Garnish with Corriander leaves, sliced Green Chillies, Lemon juice and Ginger Slices
  • Serve with Nans or Rotis
