Sheer Khurma (Vermicelli pudding)
Sheer Khurma is a very simple and delicious dessert. Sheer Khurma is the main dessert dish prepared during Eid. My family really loves this dessert so I make it quite often. This is such a simple and flavourful dessert and can be prepared with your favourite dry fruits and nuts. Dates in one of the important elements of the dish and gives a really nice flavour to the Sheer Khurma. I remember that during Eid in Karachi, our neighbours and friends used to prepare this rich dessert and we used to devour it. So if you are looking for a simple no fail Desi dessert, this is definitely the one. The taste is so rich and flavourful that you and your family/guests will simply love it and want more of it!
Ingredients
- 150 gms Vermicelli Broken/Crushed
- 2 tbsp Ghee/Butter
- 1.5 Liter Milk Full Cream
- 1/2 cup Sugar
- 1/2 cup Condensed Milk
- 3-4 Green Cardamom (Elaichi) Slightly Crushed
- 4-5 Dry Dates Remove the seeds and slice them
- 2 tbsp Pistachios Sliced Finely
- 2 tbsp Almonds Sliced Finely
- 2 tbsp Raisins
- 1 tsp Kewra Water
Garnishing
- Pistachios As required
- Almonds As required
Instructions
- Heat Ghee/Butter in a pan and add the dry dates, pistachios, almonds and raisins and roast them for about a minute until the nuts are fragrant and the raisins plump up
- Now take out the nuts, dates and raisins and keep them aside
- Add the Green Cardamom to the same Ghee/Butter and roast until fragrant
- Add the Crushed Vermicelli and roast it for 2 minutes until it changes its colour to a light golden brown
- Remove the Vermicelli and keep it aside too
- In the same pan add the Milk and bring it to a boil
- Add the Condensed milk and sugar and stir for about a minute until well dissolved
- Now add the Roasted Vermicelli and the roasted nuts, dates and raisins
- Let it cook in the Milk for about 10 minutes on medium flame while stirring occasionally
- Add the Kewra water and let it simmer for another 1-2 minutes
- Your Sheer Khurma is now ready to dish out
- Garnish with your favourite dry fruits and serve either warm or chilled
- Note: if your Sheer Khurma dries out you may add more milk and cook it
