Rabri is a very rich, creamy and delicious dessert. In Karachi you get the best Rabri from the Delhi Rabri House. Rabri is a very simple dessert to prepare but requires lots of patience. If you love Cream (Balai), then this will definitely be your favourite dessert.
Do remember that Rabri is made from Condensing the Milk hence whatever quantity of Milk you will use, it will reduce to less than half of the quantity. Only use Full Cream Milk for preparing Rabri. It is best to have Rabri chilled to enjoy it's creamy flavours. You may garnish it with Sliced Almonds and Pistachios.

Ingredients
  

  • 1 ltr Milk Full Cream
  • 1/4 tsp Green Cardamom Powder Elaichi Powder
  • 2 tbsp Sugar You may add more if you like it sweeter
  • 1 tsp Kewra Water

Instructions
 

  • Pour milk in a deep dish. Use a non stick dish preferably
  • Bring the milk to a boil and turn the heat to medium low
  • Now keep stirring the milk and leave it to slightly boil
  • You will notice that a thin layer of cream is formed over the milk, gently push the cream towards the edge of the dish
  • After pushing the cream, stir the milk and make sure nothing is stuck at the bottom of the dish
  • Leave the milk to slightly boil
  • Again you will find a layer of cream forming, repeat the same process
  • Keep repeating until only about 1 cup of thick milk remains in the dish
  • Now add the Sugar, Green Cardamom Powder and Kewra water to the milk only and stir well
  • You may add more sugar if you like it sweeter
  • Once the Milk comes to a boil switch of the stove and let it cool down for 5 minutes
  • Now scrape the cream from the sides and mix it in the milk and give it a stir
  • You may also break the cream solids into medium sized chunks while stirring
  • Once the Rabri has cooled down leave it to chill in the refrigerator
  • Garnish with your favourite dry fruits before serving
