When it comes to Desi Ice-Cream, I can not resist Peshawari Ice-Cream. It has such a subtle flavour and is very different to the regular Vanilla Ice-cream. The distinct texture of the Peshawari Ice-Cream makes it quite unique from the other Ice-Creams. The texture of the Peshawari Ice-Cream is grainy and creamy. I was so happy the first time I made this Ice-Cream at home as I used to literally crave for this flavour in Perth. Believe me if you follow the recipe exactly, you will get the authentic flavour of the Peshawari Ice-Cream. I usually make Falooda with the Peshawari flavoured Ice-Cream.You may serve the Peshawari Ice-Cream plain or drizzle some Rooh Afza and sprinkle some crushed nuts on it.
Ingredients
- 1 Litre Milk Full Cream
- 700 ml Thickened Cream/Fresh Dairy Cream Chilled
- 300 gms Sugar
- 1/4 tsp Vanilla Essence
Instructions
- Boil the milk and keep it aside. Let it turn luke warm
- Add Sugar to the luke warm Milk and beat it for about 5-6 minutes until the Sugar has completely dissolved
- Add the Vanilla essence to the Milk
- Now add only 400 ml of the Thickened Cream to the Milk mixture and beat it again for about 5-6 minutes until it thickens slightly
- Cover the dish and freeze it for about 2 hours
- Now remove the Ice-Cream Mixture from the freezer and let it thaw
- Beat the remaining 300ml of cream in a separate bowl until it forms smooth soft peaks
- Now add the beaten cream into the Ice-Cream Mixture and mix well with the help of a spatula
- Beat the mixture for 4-5 minutes until well blended
- Now transfer the mixture into a bowl
- Cling wrap the bowl so that no air enters into it
- Now cover the bowl with a lid
- Freeze the Peshawari Ice-Cream overnight
- Now scoop out your Peshawari Ice-cream. You may enjoy it plain or serve with a drizzle of Rooh Afza or some crushed nuts
