Namkeen Gosht
Namkeen Gosht is a very popular dish served in the Northern Areas of Pakistan. It is a dish cooked with minimum spices so that one can enjoy the flavours and aroma of the Meat to the fullest. Best to use Meat with bones and must have some fat as well. This will help to enhance the flavour of the dish.Usually this dish is made with Lamb but you may use Goat as well. This is a lovely and simple dish which you can enjoy with Hot Naans and Rotis on a cold evening.
Ingredients
- 1 kg Goat/Lamb Should have bones and should have some fatty meat too
- 2 tbsp Ginger & Garlic Paste
- 3 tbsp Green Chillies Finely chopped
- 3 tbsp Lemon Juice
- 1 tbsp Cumin Powder
- 1.5 tsp White Pepper Powder Use Black Pepper Powder if you don't have White Pepper Powder
- 1 cup Yogurt Well Beaten
- Salt According to taste
- 1/4 cup Oil
Instructions
- Add all the above ingredients to the Meat except White Pepper Powder and Oil
- Now mix well until the meat is well coated with the marinade
- Let the meat rest in the refrigerator for at least 2-3 hours, or overnight if possible
- Now heat the oil in a pan
- Add the marinated meat to it and stir well for about 10 minutes until the colour of the meat changes
- Now add the White/Black Pepper Powder and mix well
- Now add about 1-2 cups of water and let the meat cook until tender
- You may add more water from time to time if the water dries out and if the meat needs to be cooked more
- Once the meat is tender and cooked increase the flame of the stove
- Now Bhuno (fry) the meat on high flame, you will get a flavourful strong aroma
- Fry the meat on high flame for about 10 minutes until the gravy dries out and the oil surfaces
- Namkeen Gosht is eaten dry, it is not a gravy dish
- Your Namkeen Gosht is now ready, you may serve with Hot Naans or Rotis, Salad and Raita
