The dish, known as Khao swè, originated in Burma, and came to East India with Indians who migrated from Burma during World War II. It is associated with street food in India. The Memon community of Pakistan also adapted this dish, likely coinciding with the emigration of South Asians from Burma i and is now a representative Memon dish now known as khausa.This recipe is inspired by the Memon style Khausay, which is spicy, tangy and crispy all in one dish. The base of the dish is a mildly spiced coconut curry which lifts the flavour of the dish. The chicken curry adds the spice element to the dish. There are lots of condiments that go with this dish which gives the dish more soul and texture.My Memon friend actually introduced me to this dish. At first I was quite skeptical about the taste as I couldn't interpret the combination, but when I had it I just couldn't get over the variety of flavours one dish could offer.This dish is definitely a must -try for all those who are in for a flavourful experience.
Ingredients
Coconut Milk Gravy
- 1 cup Gram Flour (Besan) Well sifted
- 1 can Coconut Milk
- 1 tsp Ginger & Garlic Paste
- 1 tsp Cumin Powder
- 1 tsp Tumeric Powder
- 1 tbsp Finely Chopped Green Chillies
- 1 tsp Red Chilli Powder
- 1 cup water
- 1 tbsp Lemon Juice
- 1/2 tsp Yellow Food Colour
- Salt According to taste
Chicken Gravy
- 1/2 kg Boneless Chicken Cut in cubes
- 1 tsp Ginger & Garlic Paste
- 1/2 tsp Tumeric
- 1/2 tsp Black pepper powder
- 1 tsp Garam Masala Powder
- 1 tbsp Cumin Powder
- 1/2 tsp Corriander Powder
- 1 Tbsp Red Chilli Powder
- 1/2 tsp Food Colour (Red/Tandoori Colour)
- 1/4 cup Oil
- 3/4 cup Yogurt Well beaten
- 1/2 cup Fried brown onions
- Salt According to taste
Garnishing (Quantities as required)
- Fried Brown Onions
- Chopped Corriander
- Chopped Green Chillies
- Chaat Masala
- Crushed Red Chilli Flakes
- Lemons
- Spicy chips or Papri
- Fried sliced garlic
Spaghetti
- 1 packet Spaghetti Any brand
- 1 tbsp Oil
- Salt According to taste
Instructions
Coconut Milk Gravy
- Mix all the ingredients in a bowl and whisk well, there should be no lumps
- Now transfer the mixture into a dish and place it on the stove at low flame
- Now keep stirring the mixture for about 20 minutes (medium flame) and add 4-5 cups of water in between to keep the desired consistency. When your mixture is smooth and starts to bubble, it is ready. The mixture shouldn't be too runny nor thick, it should have a soup like consistency
Chicken Gravy
- Mix all the ingredients well and marinate it in the fridge for about 20 minutes
- Now put the marinated chicken in a dish and cook it on medium flame, can add about 1/2 cup of water for the gravy. You may add more water if required.
Spaghetti
- Boil the Spaghetti in water and add Oil and Salt when boiling. Strain the Spaghetti and keep it aside
