Kabab Fry-Burns Road style
One of the popular highlights of Burns Road is the Kabab Fry. It is a delicious and rich mince which is melt in the mouth. The taste of the Kabab Fry is very similar to the Seekh Kabab infact it has the same ingredients. In reality the Seekh kababs are actually fried in rich ghee or butter to the the smooth melt in the mouth consistency.Kabab fry is a cooked very often at my home and the boys love it. It is very easy to prepare. The spice mix is the heart of the recipe so make sure you have the ingredients or the alternate ingredients to prepare it.
Ingredients
- 500 gms Mince (Fine) Beef/Lamb/Chicken/Goat
- 1/2 cup Yogurt Well Beaten
- 1 Onion (medium sized) Finely sliced
- 1/2 cup Ghee/Butter You may use Oil as an alternative
- 1 tbsp Ginger & Garlic Paste
- 1 tbsp Raw Papaya Paste Or 1 tsp Meat tenderizer
- 1 tbsp Kashmiri Red Chilli Powder May use 1 tsp of normal Red Chilli Powder as an alternative
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- Salt According to taste
Spice Mix for Kabab Fry
- 1 Black Cardamom
- 3-4 Black Pepper
- 1 Cinnamon stick about an inch long
- 2-3 Green Cardamom Elaichi
- 2-3 Cloves
- 1 tbsp Cumin Seeds
- 1 tsp Coriander seeds
- 1.5 tbsp Gram Flour/Besan slightly roasted
- 3-4 Red Button Chillies If you don't have these then you can alternatively use1 tbsp of Red Chili Flakes
- 1/2 tsp Nutmeg Powder
- 1 stick Long Pepper (Peepli/Pippli) You may omit if you don't have this available
Coal Dum
- 1 piece Coal
- 1 tbsp Oil
Instructions
1st Marination of the Mince
- Firstly make sure that the Mince is dry, dab the Mince with a Kitchen Towel or Tissue to make sure it is dry
- Add Yogurt, Meat Tenderizer/Raw Papaya Paste, Ginger & Garlic Paste and Salt to the Mince and mix well
- Now marinate the mince for 30 minutes, you may refrigerate it
Preparation of the Spice mix
- Add all the ingredients to a pan and slightly roast it until fragrant
- Now grind all these ingredients into a powdered form and keep aside
2nd Marination of the Mince
- Now add the powdered Spice mix, Kashmiri Red Chilli Powder, Turmeric Powder, Coriander Powder to the mince and mix well
- Now let the mince marinate in the fridge for at least 1 hour
Preparation of the Kabab Fry
- Heat the Ghee or Butter in a deep dish until melted
- Now fry the sliced onions until Golden Brown
- Add the marinated mince and fry for at least 5 minutes until the colour changes
- When the oil starts to float, add between 1 to 1.5 cups pf water to the mince
- Let the mince simmer on medium flame for about 10-12 minutes
- Check the mince, it should be thick in consistency and the oil should float
- At this point you may add 1 tbsp of butter for extra flavour
- Let the mince simmer for another 1-2 minutes
- Now you may give the coal dum to your Kabab Fry
- Kabab Fry is now ready, garnish it with chopped coriander, green chilies, and lemons
- Serve with Hot Nans or Rotis
