Jalebi is a very popular sweet dish not only in the Sub-Continent but also in some of the Middle Eastern countries . It can be served hot or cold but it is preffered to be served hot. Jalebi has a crispy texture on the outside and chewy on the inside. It is coated with a thick sugar syrup and is quite sticky. In some parts of the Sub continent it is eaten with Milk or Rabri (which is another delicious Desi Dessert made with cream and Milk).
Jalebi is found in almost every local streets of Pakistan/India, it is not expensive and people usually buy it in dozens. It is usually eaten as a tea-time snack.
This is my son's favourite sweet dish and he loves to eat it when its fresh and warm. My Dad used to buy it for him especially from the streets of Burns Road which is the main Street food spot of Karachi. This is a simple recipe and can be easily made with a few staples.

Equipment

  • Piping Bag/ Empty Sauce Bottle with Nozzle

Ingredients
  

Jalebi Mixture

  • 2 cups Flour/Maida
  • 2 tbsp Oil
  • 4 tbsp Yogurt
  • 1.5 tsp Baking Powder
  • 1/2 tsp Food Colour powder Orange/Yellow/Saffron as per your choice
  • 1/2 cup Water
  • Ghee/Oil for Frying

Sugar Syrup/Sheera

  • 1.5 cups Sugar
  • 1.5 cups Water
  • 3 Green Cardamom
  • 1 tsp Kewra Water Optional
  • 1/2 tsp Lemon Juice

Instructions
 

Sugar Syrup/Sheera

  • Add sugar to the Water and keep stirring until dissolved
  • Add the Green Cardamom and the Kewra Water to the Sugar Water
  • Stir until your Syrup is thick, check with your finger and it should stick to your finger
  • Add the lemon juice and swtich off the flame

Jalebi

  • In a separate dish add all the ingredients except the water
  • Now mix the ingredients and add the water little at a time until it all blends
  • You can use an Electric beater to blend the mixture. The mixture should be thick like a cake batter and not runny
  • Now put the mixture into a piping bag with a small nozzle attached at the end or use a Squeezy Sauce bottle
  • In a deep dish pour some Ghee/Oil. Ghee will give a more Desi and Street Style flavour.
  • There should be enough Ghee/Oil (A bit less than Deep Frying amount)
  • The Ghee/Oil should be hot and set on Medium Flame
  • Now make Spirals in the Oil with the help of your Piping Bag/Squeezy Bottle
  • Let the Spirals float on top of the Oil and flip to the other side when it gets crispy
  • Fry it for about a 1-2 minutes until it gets Crispy on both sides
  • Now put the Jalebis in the Sugar Syrup. The Sugar Syrup should be warm not hot
  • Let the Jalebis simmer in the Sugar Syrup for abour 20-30 seconds and then dish them out in a Separate plate straining any excess syrup
  • Serve warm
