Hot and Sour Soup
Hot and Sour Soup is another favourite amongst Soups. I love Soups be it Winter or Summers and especially love having it with different garnishing. I still think that the Hot and Sour Soup served at the Chinese Restaurants in Karachi were much better than what I have tasted here in Perth.Hence I have tried to bring out a similar flavour. Hot and Sour is a very flavourful Soup and has a variety of Veggies and you may use either Chicken or Prawns as a Protein element in the Soup. This Soup is so delicious that I feel if it were even Vegetable Hot and Sour Soup, I would still have it delightfully 🙂 I have put the vegetables towards the end so that it still maintains a crunchiness and is not soggy. You may also use the ready made stock if you don't want to make it from scratch.This is a perfect Soup for a cold Winter Night and also can be served for get togethers or parties as a appetizer, it surely will be a hit!
Ingredients
Ingredients for Soup Stock/Broth
- 500 gms Chicken use chicken with bones
- 2.5 litres Water
- 2 cloves Garlic
- 1 piece Ginger about an inch
- 1/2 tsp Black Pepper Powder
- 1 cube Chicken Stock
- Salt as required
Ingredients for Hot and Sour Soup
- 2 tbsp Oil
- 2 tbsp Garlic Finely Chopped
- 1 tsp Ginger Finely Chopped
- 1 tbsp Green Chillies Finely Chopped
- 1 cup Mushrooms Finely sliced preferably Shitake Mushrooms
- 1 cup Carrots Julienne cut
- 1.5 cups Cabbage Julienne cut
- 1 cup Corn Kernels Boiled or can used canned
- 1/4 cup Spring Onions Finely Chopped
- 1/4 cup Soya Sauce
- 2 tbsp Vinegar
- 2 tbsp Chilli Sauce
- 3 tbsp Tomato Sauce/Ketchup
- 1/2 tsp Black Pepper Powder
- 1/4 cup Cornflour
- 2 Eggs Well Beaten
- Salt
Instructions
Instructions for Soup Stock/Broth
- Pour 2.5 litres of Water in a deep dish and add the Chicken, Garlic, Ginger and Black powder to it
- Let the stock boil for about 30 minutes
- Strain the stock and keep aside, throw away the Ginger and Garlic pieces
- Keep the Chicken aside
- Now remove the meat off the bones
- Shred the Chicken and keep aside

Instructions for Hot and Sour Soup
- Pour Oil in a pot and sauté the chopped garlic, ginger and green chillies for about 1-2 minutes until fragrant, don't brown it
- Add the chopped Spring Onions and Mushrooms and sauté slightly
- Now pour the Soup Stock/Broth. It should be 2.5 litres.
- If the stock is less than 2.5 litres, add water to ensure that the measurement is exactly 2.5 litres
- Now let the stock come to a boil, add the Chicken and corn and stir well
- Add the Soya Sauce, Chilli Sauce and the Tomato Sauce/Ketchup and let it cook for about 5-6 minutes
- Check the Salt at this stage and adjust accordingly
- Now mix the cornflour with some water and form a mixture
- Slowly add the mixture into the soup and keep stirring until the cornflour is well dissolved
- Let the soup boil until it thickens slightly
- You may add more cornflour mixture if you want it thicker
- Now add the carrots and cabbage to the soup and stir well and let it cook for about 1-2 minutes
- Now pour the beaten eggs in the soup and keep stirring continuously
- Let the Soup boil for about 1-2 minutes
- Hot and Sour Soup is now ready to serve
- Garnish it with some Spring Onions and serve with Prawn Crackers
