Gajar ka Halwa or Carrot Halwa is a favourite Desi Meetha in Pakistan. This Carrot pudding is a rich and flavourful Dessert. Since it is a warm and comforting Dessert, people usually enjoy it during winters but I can enjoy this lovely Meetha anytime of the year! The ingredients I have used in this recipe are quite simple as I think that no matter how rich this dish may be, the Carrots should be remain the Hero of the dish. The Khoya/Mawa balances the sweetness of the dish hence it is suggested to use Khoya/Mawa generously.
There are very few Desserts which I enjoy, and hands down Gajar ka Halwa is amongst the top. Do give this recipe a try and I am sure you will WOW everyone at home as it will taste just like the Mithai wala Gajar ka Halwa.

Ingredients
  

  • 1 kg Carrot Shredded
  • 2 cups Sugar
  • 1 cup Milk
  • 1/2 cup Ghee/Oil
  • 4-5 Green Cardamom (Slightly Crushed) Elaichi
  • 1 cup Khoya/Mawa
  • 1/4 cup Sliced Almonds
  • 1/4 cup Sliced Pistachios

Garnishing

  • Sliced Almonds As required
  • Sliced Pistachios As required
  • Sliced Cashews As required

Instructions
 

  • Take a deep dish and cook the shredded carrots on medium flame for about 10 minutes
  • Now add milk and 1 cup of sugar (keep the other 1 cup for later) and mix well
  • Now let the carrots cook for about 30-35 minutes, stir occasionally
  • The Carrots should be soft in texture and glossy in look
  • Now add the Green Cardamom and Ghee/Oil and cook the Carrots for about 5 minutes
  • You should get a fragrant aroma of the Cardamom
  • Now add the remaining 1 cup of sugar ( you may use only 3/4 cup if you don't want it too sweet)
  • Once the sugar is completely dissolved add the Khoya/Mawa ,sliced Almonds and Pistachios and mix well
  • Let it cook for about 1-2 minutes
  • Your Halwa is now ready to be served, garnish it with Khoya and your favourite dry fruits. Serve warm
