Choley Bhature
Chole bhature is a food dish popular in the Northern areas of the Indian subcontinent. It is a combination of Channa masala (spicy white chickpeas) and bhatura / puri, a fried bread made from Flour. It is known as a typical Punjabi dish.
Ingredients
Ingredients for Choley
- 1 cup Chickpeas (Channa/Choley)
- 1.5 tbsp Ginger & Garlic Paste
- 1 cup Tomatoes Chopped
- 4-5 Green Chillies
- 1/2 cup Onions Finely Chopped
- 1/2 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1.5 tsp Red Chilli Powder
- 1/2 tsp Amchur Powder/Mango Powder You may use Chaat Masala Powder as an alternative
- 1/2 tsp Garam Masala Powder
- Salt According to taste
Whole Spices
- 1 tsp Cumin Seeds Zeera
- 1 Cinnamon Stick Inch long
- 2-3 Cloves
- 1-2 Green Cardamom Elaichi
- 1 Bay Leaf
Ingredients for Bhature
- 2.5 cups Flour Maida
- 1/2 tsp Baking Powder
- 1/4 cup Semolina
- 1/2 cup Yogurt
- 1/4 tsp Sugar
- 3 tbsp Oil
- Salt According to taste
Instructions
Instructions for Choley
- Soak the Chickpeas or Choley overnight. If you are using the canned Chickpeas, then there is no need to soak it
- Drain the water and boil the Chickpeas in a separate dish until tender.
- Keep aside 1-2 cups of the Chickpeas/Channa Water
Tip: You may add 1/2 tsp of Baking Soda when Boiling for quick results
- Heat Oil in a pan and sauté the Onions until golden, add the Ginger& Garlic paste and fry until fragrant
- Now add the Chopped Tomatoes fry until the Tomatoes have blended
- When a thick gravy is formed and the oil starts to float, it is time to take out the gravy in a separate dish
- The gravy should be smooth. If your gravy is not smooth you can blend it as well
- Now take a separate clean dish and heat some oil in it, about 1/2 cup should be good
- Now add the Whole spices and let it sauté for about a minute until fragrant
- Add the Onion and Tomato smooth and thick gravy and fry for about 1-2 minutes
- Add your salt at this stage
- Now add all the other spices and green chillies and mix well until a smooth gravy is formed
- Now add the boiled Chickpeas and mix again
- You may add the leftover Chickpea Water (when boiling)
- Add 1-2 cups as per your desired consistency of the gravy
- Cover the dish and let the Chickpeas simmer for 10-12 minutes
- Once the Oil starts to float the Choley is ready
- Garnish with some Coriander leaves
Instructions for Bhature
- Sieve all the dry ingredients together
- Add the Yogurt and mix well
- Now add the oil and mix again
- Gradually keep on adding luke warm water and form a smooth soft dough
- Rub some oil on the dough, cover and keep aside to rest for about 20-25 minutes
- Heat Oil in a deep dish. Please ensure that there is enough Oil for deep frying
- Now divide the dough into equal sized balls
- Slightly grease your worktop and roll each ball into flat discs
- Now fry the discs in the hot oil until they are golden and puff up
- Keep them aside on an absorbent paper
- Choley Bhature is now ready to be served with some yogurt and Onions
