Chicken Chargha is a full chicken which is marinated for several hours and then cooked. The cooking usually has 2 steps; firstly steaming the Chicken and then deep frying it. For those looking for a healthy option may opt to Air-fry or bake it as well.Chargha is quite moist than the Roasted Chicken, reason being that it is steamed first due to which the moistness is intact. Ingredients
- 1 Full Chicken Skinless
Ingredients for Marinade
- 2 tbsp Ginger & Garlic Paste
- 1/2 Onion Cut in 4's
- 1/2 cup Yogurt
- 1/2 tsp Turmeric Powder
- 1/2 tsp White Pepper Powder Can use Black Pepper Powder as an alternative
- 1 tbsp Red Chilli Powder
- 1 tsp Paprika Powder
- 1 tbsp Coriander Powder
- 1 tsp Roasted Cumin Powder
- 1 tsp Chaat Masala Powder
- 1/4 tsp Orange Food Colour Optional
- 2 tbsp Lemon juice
- Salt According to taste
Instructions
- Wash the Chicken well and make deep gashes on the Chicken
- Put all the ingredients of the Marinade in a jar/dish and blend to form a thick smooth paste
- Now rub the paste all over the chicken and make sure that you put the marinade in between the gashes
- Now cover the dish and let the Chicken marinate for atleast 3 hours
- You may also marinate this Chicken overnight
- After marination, the first step is to steam the Chicken
- Chicken needs to be steamed for about 20-25 minutes on medium flame
- After the Chicken is steamed, let the Chicken cool down completely
- In the meanwhile, heat Oil in a large Wok/dish
- Once the Chicken has cooled down it needs to be deep fried for about 5-8 minutes on each side or until cooked and crispy on the outside
- If you are looking for a healthy option you may also Air fry the Chicken or Bake the Chicken in the oven
- Chargha is ready, squeeze some lemon juice over it and sprinkle some Chaat Masala
- Serve with some Salad and Raita with Naans/Rotis
