Fry the Onions until golden brown
In a separate dish, par boil the Potatoes and keep aside
Now add the whole spices and fry until aromatic
Add the Ginger and Garlic paste and fry well for about a minute
Now add the tomatoes and fry for about a minute and cover the dish
Keep the dish covered for about 5 minutes on medium-low flame so that the tomatoes soften
In the meanwhile make the green chutney paste by blending the Coriander leaves, Mint leaves and 4-5 chillies together. Add about 1/2 cup water when blending it
Now fry the tomatoes on high flame until it is blended and a thick gravy is formed
Now add the Green Chutney paste to the mixture
Fry well until aromatic and the oil starts to float
Now add the Prawns and the par boiled potatoes and fry for about 2-3 minutes until the colour changes
Now add about 5-6 cups of water and bring it to a boil
Strain the soaked Rice and add it to the Prawn stock
Cover the dish and let it cook on medium flame
Once the water has evaporated and the rice is cooked and the prawns have got a nice colour to them, your Prawn Pilau is ready
Serve with some Salad and Raita
