Steam Roast Chicken is a flavourful and nutritious dish, popular in Pakistan. It is said to be one of the main dishes for big events including weddings. The marination of the Chicken is the most important part for the preparation of this dish. Your can either Steam Roast the whole Chicken or have it cut into pieces. I have used skinless Maryland pieces as it is easier to make slits in them. I have mentioned 2 methods of cooking it and you may choose any method as per your suitability. The 1st method is the healthier version whereas the 2nd method requires the Chicken to be deep fried before it is steamed. The reason for steaming the chicken is to maintain the succulent texture of the meat. Steam Roast can be served with grilled vegetables or fresh salad and can be eaten with either Nans/Rotis or Rice.
Wash the Chicken well and make slits in the chicken
In a separate bowl mix all the spices together, add the yogurt, ginger & garlic paste, green chilli paste, lemon juice, salt, cornflour and oil to form a smooth marinade
Now add the Chicken to the marinade and mix well
Leave the chicken to marinate for atleast 1 hour
Method 1- Baked, healthy version
After the marination is done, bake the Chicken in the oven for 30-40 minutes on 180 degrees C (Please flip sides half way through the baking)
Once the Chicken is completely baked, take it out.
Now add some water in the steamer and steam the chicken for 10-12 minutes. Your tasty Chicken Roast is ready to serve.
Method 2- Fried version
After the marination is done, put the chicken in a dish and add 1 cup of water, let the chicken cook until all the water is evaporated for approximately 20-25 minutes.
Now deep fry the chicken until it has a golden brown colour
Now add some water in the steamer and steam the chicken for 10-12 minutes. Your tasty Chicken Roast is ready to serve.
