Lamb Shanks is definitely a dish which everyone at home enjoys. Especially on a Sunday night the boys love to have a nice meaty and hearty meal. Lamb Shanks is definitely a very delicious and rich dish. If cooked perfectly, the texture of the meat will be melt in the mouth. There are very few ingredients in this Lamb Shank recipe but it is extremely flavourful. The Lamb Shanks need to be slow cooked for about 3 hours so that you get the perfect fall apart texture and the gravy will have a rich flavour to it.

- 4 Lamb Shanks You may use Leg of Lamb 1.5 kgs
- 1 Onion Finely Chopped
- 2 Carrots Chopped
- 1.5 cups Tomato Paste
- 4-5 Garlic Cloves Finely Chopped
- 1.5 tsp Paprika Powder
- 1 tsp Black Pepper Powder
- 1 tsp Cumin Powder
- 2-3 cups Vegetable stock you may use Lamb stock too
- Salt According to taste
Pour some Oil in a deep dish
Braise the Lamb Shanks for 5-8 minutes until brown
Remove from the dish and set aside
Now add the Chopped Garlic and Onions and in the same oil and saute until frangrant
Add the spices and the tomato paste and cook until the oil separates
Now add the Lamb Shanks and fry well for 3-4 minutes
Now add the Carrots and the Stock and cover the dish
Let the Lamb Shanks simmer on medium to low flame for 3 hours
Keep checking from time to time
You may add more stock or water if the gravy dries out
Once the gravy thickens and the Lamb Shanks are soft and fall apart, you may dish it out
Serve with some mashed potatoes and garnish with some fresh Coriander Leaves
