Dahi Phulkian or Dahi Bharay is a popular Street Food in Pakistan. In my opinion you can get the best Dahi Phulkian in Burns Road. The balance between sweet and savoury is perfect. The texture of the Dahi (yogurt) is silky smooth and the Phulkis are soft as ever.I have simplified this recipe as much as I could so that you can quickly prepare it and enjoy it with your friends and family.Another main element of the dish is the fragrant Masala which is used as a garnish. I have also put in the recipe for the Masala so that you can easily prepare it at home.
Add a little more water if the mixture is too thick
Now whisk the mixture with the help of a beater or whisker for about 5-8 minutes (The more you whisk it the fluffier the Phulkis will become)
Heat oil in a deep pan for deep frying
Now with the help of a teaspoon, take a spoonful of the mixture and drop it in the oil. The Phulkis should come up immediately and become fluffy and crispy
As soon as they get golden brown remove them from the oil and place them on a kitchen towel. Let it cool down for about 5 minutes
Fill some water (room temperature)in a bowl and transfer all the Phulkis into it
Let the Phulkis rest for about 5 minutes or until soft
Now press the Phulkis gently to remove the water it has absorbed and keep them aside
Ingredients for Dahi
Make sure that the Yogurt doesn't have any excess water
Add the sugar to it and mix well
Now whisk it for about 5-8 minutes until the sugar is blended
You may add more sugar if required
Also you may add some water to the mixture according to your desired consistency
Now refrigerate this mixture for about 1-2 hours until chilled
Tip: Best to prepare your Dahi mixture before you start making the Phulkis
Ingredients for Masala (for garnishing)
Rooast all the dry ingredients until fragrant
Grind the Ingredients to form a powdered texture (You may also grind it coarsely as per your liking)
