Chicken Chilli served with Egg Fried is a very popular Desi Chinese duo dish. Chicken Chilli is quite spicy and flavourful. You may have it dry or gravy style. I prefer the Gravy style since my family loves to have rice dishes with lots of gravy. There are various vegetables that can be used in the Egg Fried rice. I prefer using peas, cabbage, carrots, capsicums and spring onions. When it comes to Desi Chinese I don't like to over cook the vegetables as I like them to be crunchy while eating. Hence for my Desi Chinese recipes, I don't overcook the vegetables.Do try this Recipe at home, as it is quite simple and you will definitely enjoy the Desi yet Asian Flavours of this dish.
Instructions for the marination and frying of the Chicken
Add the Black Pepper powder, Salt, Ginger & Garlic Paste and Soya Sauce to the Chicken and mix well
Now add the Cornflour, Flour and beaten Egg and mix well until the chicken is well coated
Keep the marinated Chicken aside for 15 minutes to rest
Now deep fry the coated chicken pieces in hot oil
Remove the pieces and place on kitchen towel/paper
Instructions for Gravy
Firstly prepare the Gravy Sauce by adding all the ingredients in a bowl (mentioned in Part 3 of the Chicken Chilli Ingredients list) . Mix it well and keep it aside
Instructions for Sautéing
Pour Oil in a dish and heat it
Sauté the Chopped Garlic and Ginger
Now add the sliced Green Chillies and sauté slightly
Add the cubed onions and Capsicum and sauté slightly for about a minute, don't over cook it
Now add the Gravy sauce that was prepared earlier and keep stirring on medium to low flame
Let the gravy cook and allow it to thicken. Cook for about 4-5 minutes
You may add another cup of water if you want more gravy
When the Gravy starts to thicken and comes to a boil, add the fried chicken pieces
Now stir well and let the Chicken simmer for about 2-3 minutes
Chilli Chicken is now ready, serve with Egg Fried Rice
Ingredients for Egg Fried Rice
Pour Oil in a Wok or Dish
Add the Beaten eggs and scramble fry it
Remove the scrambled eggs and keep aside
Use the same Oil for sautéing the vegetables, you may add 1 tbsp more oil if required
Sauté the chopped Garlic
Add the Cabbage, Carrots, Peas and Capsicum and sauté for about 1-2 minutes
Now add the Spring Onions and sauté slightly
Add the Black pepper powder, salt, crumbled chicken stock cube and soya sauce and mix well
Now add the Rice and scrambled eggs and stir fry well with all the vegetables on high flame for about 1-2 minutes until well combined
Egg Fried Rice is now ready to be served
