Take a deep dish and cook the shredded carrots on medium flame for about 10 minutes
Now add milk and 1 cup of sugar (keep the other 1 cup for later) and mix well
Now let the carrots cook for about 30-35 minutes, stir occasionally
The Carrots should be soft in texture and glossy in look
Now add the Green Cardamom and Ghee/Oil and cook the Carrots for about 5 minutes
You should get a fragrant aroma of the Cardamom
Now add the remaining 1 cup of sugar ( you may use only 3/4 cup if you don't want it too sweet)
Once the sugar is completely dissolved add the Khoya/Mawa ,sliced Almonds and Pistachios and mix well
Let it cook for about 1-2 minutes
Your Halwa is now ready to be served, garnish it with Khoya and your favourite dry fruits. Serve warm
